After 10 years of doing this diet, that diet, lemon detox, blood type, paleo and low carb and HCG, I finally got sick of it!
I got sick and tired of being bloated, overweight, lethargic and worst of all, up set each time I sat down to eat a meal. Every thing I ate left me bloated, even tomatoes and lettuce in the end!
It was my birthday, 1st February and I had had enough of listening to everyone else about what I should and shouldn’t eat. I have amazing friends that are experts and even they couldn’t figure out why I wasn’t loosing weight! So, I decided to take food in to my own hands and throw out every diet and recipe book in my house, I was fed up!
At the age of 23 I chose to begin a vegan lifestyle, but I had no idea how to do it. I didn’t want to eat animals anymore and didn’t want to be someone who contributed to the death, slaughter and insane cruelty that our animals are subjected to through de-sensitised farming practices. The only problem was I simply replaced meat with bread, and didn’t educate myself properly.
Fast forward 20 years and it’s my birthday, I’ve had enough of listening to everyone else, and I choose Vegan again. For the same reasons, only this time, I choose to educate myself on how to eat well, be well and healthy.
In my exploration and investigation I discover there is more protein available to the body in Kale than there is in a steak and no brutality was inflicted on the Kale in order for it to reach my plate…. HAPPY DAYS!!
I enlisted the coaching of a Vegan food coach who recommended a way a daily eating and I’ve been following a very straight forward regime ever since. I’ve never felt better, I’ve never had more energy, clarity, connectedness to nature and humanity and I’m absolutely LOVING eating food that has life in it!! I’ve lost 8kgs without even trying and I’m still dropping !
My daily diet consists of fresh juicy fruit for breakfast, as much as I want! Banana, papaya, peaches, pineapple, acai, berries, and I make smoothies, fruit whips using my Thermomix or sometimes, I’ll dehydrate 2 bananas that I’ve blended into a liquid and made crepes which I will use to stack high with fresh berries, fruit whip and a little home made, dehydrated granola on the top.
Then at lunch time it’s all about the greens. Chard, baby spinach, mesclin lettuce, kale, cabbage, beet greens…. Sometimes lightly steamed and some times raw… with all the colours of the rainbow as extras like carrot, beetroot, red and yellow capsicum, tomato, corn all topped with my favourite dressing of Olive Oil, shallots, fresh orange juice, salt n pepper
Dinner is similar to lunch though I do like to add baked potato, sweet potato or pumpkin with any number of devine dressings that I have made. Right now, I’m loving my Miso and sesame dressing.
I may have a desert of homemade coconut ice-cream with my own home-made chocolate grated over the top. YUMMO!!!
Snacks are a little coconut yoghurt, fruit, rice-cakes with avocado and tomato and anything that I feel like provided it’s not high in fat and fresh.
Am I tempted by ordinary foods?……….NO WAY!! I watch the way other people eat and I feel compassion for them and the cruelty they are obliviously endorsing just so they can eat a steak or a roast. I am never tempted by dairy, pizza or burgers because to me, they are the epitome of pain and suffering for all involved including me and I’m just not prepared to go there. The food is disgusting, it smells revolting and the affect on the human body is startling. The more I discover about my choices, the more I’m convinced people should switch to a plant based way of eating!! There are no limitations, no restrictions, only beautiful healthy food prepared for us by nature, as opposed to processed, poisoned and toxic food prepared by a science lab, an abattoir or a some other profit driven entity that cares very little for the health of society!
